U.S. Olympic speed skater Emily Scott’s experience with beef on the farm and on the plate prepares her for competition in the upcoming 2014 Sochi Olympic Games.

Scott spent years training during her childhood in Springfield, Missouri, but on the weekends she traveled to Everton, Missouri to work on her farther and grandfather’s 80 acre farm.

In addition to her competitive responsibilities, she has been named the Missouri Beef Industry Council’s 2014 Olympic Beef Ambassador of Missouri. Scott was chosen for her strong advocacy as using beef as her main source of protein and the importance it plays in her everyday training regimen.
